Hu tieu is a kind of noodle of Vietnam along with Pho, Bun…but
Hu tieu is just famous and normal in the south of Vietnam, specially in Hochiminh city.

Talking about the name of this dish. The first, Hu tieu
means rice noodle in the south of Vietnam. Why they call Nam Vang, because Nam
Vang is Phnom Penh, so this noodle could be originated from Cambodia, but
processed by Chinese ethnic.
The main raw material
is dried noodles. Broth is chopped meat cooked with pig organs.
After noodle is boiled over with broth put different raw
materials as beansprout, shallot, minced meat and pig organs
into.
Besides different regions also differ in material as
meatballs or seafood: shrimp, crab, squid, etc… depending on each person's
taste.

Specially for this noodle that you can order two versions:
dry (without soup) and water (with soup), for dry version they
mix the noodle with soy sauce, and serve you with separated small bowl of soup,
you can eat just noodle first and taste the soup later.
